Position Overview
Wilding Brands is seeking a highly skilled and detail-oriented Senior Cellar Technician to join our production team at Wilding Canwerks. This hands-on role is critical to ensuring the quality, consistency, and efficiency of our cellar operations, including fermentation management, transfers, dry hopping, fruiting, and tank prep for packaging.
The ideal candidate brings a strong background in cellar work and is ready to take on increased responsibility and ownership within a collaborative and fast-paced production environment. You’ll work cross-functionally with brewing, packaging, and quality teams while mentoring junior team members and helping to refine our cellar practices.
Key Responsibilities
- Execute daily cellar operations including fermentation monitoring, CIP/SIP of tanks, product transfers, carbonation, and finishing
- Perform dry hopping, fruiting, fining, and blending in accordance with SOPs and safety standards
- Monitor key fermentation metrics (gravity, pH, temperature, CO2) and record in production software
- Lead yeast handling activities including harvesting, propagation, and pitching
- Ensure proper documentation and communication throughout production processes
- Support preventative maintenance and troubleshoot cellar equipment as needed
- Maintain a clean, organized, and sanitary cellar environment
- Collaborate closely with the brewing, packaging, and lab teams to meet production targets
- Help develop and refine SOPs and training materials for cellar operations
- Assist in training and mentoring cellar technicians and new hires
- Participate in daily production meetings and contribute to continuous improvement efforts
Qualifications
- Minimum 3 years of professional experience in a cellar or fermentation-focused production role
- Proficiency with pumps, hoses, CIP systems, and standard cellar equipment
- Understanding of fermentation science and common QA/QC practices
- Experience with dry hopping, fruiting, blending, and carbonation techniques
- Strong mechanical aptitude and ability to troubleshoot basic equipment issues
- Familiarity with EKOS or similar production ERP systems preferred
- Forklift experience and/or certification is a plus
- Strong organizational skills, attention to detail, and commitment to cleanliness
- Ability to lift 55 lbs repeatedly and work in cold, wet environments
- Effective communicator and team player
Compensation & Benefits
Hourly Range: $25–$28 per hour, depending on experience
