Fort George is hiring for the cellar! The purpose of this position is to monitor beer throughout the cellaring process and perform any necessary related tasks. This role documents fermentation processes and relevant data, harvests yeast from preceding fermentations, carries out necessary dry-hopping and other additions, transfers beers to and from various vessels with centrifugal pumps and centrifuges, oversees the carbonation process, cleans tanks and vessels as needed, etc. The cellar position requires attention to detail and accurate documentation. Varying schedule to include weekends, evenings, holidays and extended hours as business dictates.
Essential Functions
- General
- Tank cleaning with caustic and acid and tank sanitation with peracetic acid
- Harvesting yeast into storage tanks and kegs
- Dry Hopping from a scissor lift into the tops of tanks
- Dumping yeast, hops, and trub from tanks
- Transferring beer through centrifugal pumps and centrifuge
- Monitoring Dissolved Oxygen through Anton Paar Cbox
- Carbonating Beer to spec and checking with Zahm or Anton Paar Cbox
- General cleaning of the brewery
- Input into Ekos (Or other brewery inventory software) task and ingredients used in process
- Inventory counts assigned by Inventory and procurement team
- Any other duties assigned by supervisor
- Communication
- Maintaining a high level of communication with leadership, department heads, managers, and staff
- Respectfulness & professionalism in all communication
- Monitor and post on Slack (or a similar communication platform) with information on job duties
- Attend brewery department meetings as assigned
Who We Are Looking For:
- You are 18 years or older.
- Previous centrifuge and brewing experience is preferred but not required
- Math! (Basic math competency, such as addition, subtraction, multiplication, division, and computation of rates, ratios, and percentages / make your phone calculator work for you!)
- Machines! (Basic mechanical competency / is it a flat head screwdriver or a wrench?)
- Reading! (Ability to read labels on chemicals and equipment, and snarky, clever notes from coworkers)
- Loud Noises! (Ability to communicate with coworkers in a noisy environment/sing-song lyrics loud enough to hear over equipment)
- Safety! (General knowledge of occupational hazards and safe operating procedures associated with essential functions of this position* / be safe, protect the people, protect the beer; we will train on this)
- Forklifts! (Ability to obtain and maintain Forklift Operator’s certification*; be able to safely operate brewery equipment, including but not limited to forklifts, pallet jacks, etc. / ever driven a golf cart? A golf cart loaded with 5,000 lbs of beer!?)
- Adaptability! (Must be able to adapt to frequent changes in workload and adjust priorities quickly as circumstances dictate / you can’t rush good beer, but you also can’t stop it from being ready at the same time as all the other beer.)
- Valid OLCC Server’s Permit preferred (not required; great if you're willing/able to obtain upon hire)
- Cicerone Certified Beer Server Certification or greater preferred (not required; great if you're willing/able to obtain upon hire)
Hourly Range $18.00 to $24.00 DOE
