Title: BREW MASTER (Background from Big-Scale Brewery)

Location: Phnom Penh, Cambodia

PURPOSE OF ROLE:

We are currently seeking an accomplished Brew Master to join our dynamic team, and after careful consideration, we are particularly interested in individuals with experience in large-scale companies.

The Brew Master will lead and oversee all the initiatives related to New Product Development in the brewery. The Brew Master will be the primary internal advisor and contact point for all brewing process/recipe improvement, product quality improvement, and process control stability. Brew Master will also be the primary contact point for brewing training and education.

KEY ACCOUNTABILITIES:

·      Take a lead and maintain a safe, healthy and risk-free work environment.

·      Take a lead on New Product Development (NPD) project or implementation of new technology in the brewery. Utilize project management to monitor the NPD progress and execution of actions.

·      Initiate and lead process improvement projects/teams, to share knowledge and experience with the team on how to excel in the quality indicators throughout the production process.

• Initiate and/or participate in developing recipes and technological process improvements with relevant Technical Brewer/technologist to understand the production process technology in depth and to be able to carry out technological trials and evaluate the results.

·      Develop understanding of the main process parameters and what happens when they are changed and maintain a controlled process and a consistent finished product to the required quality.

·      Fully accountable and led the Brewery in regarding the importance and impact of process hygiene, hygienic design and modification of installations to the product quality.

·      Participate in the evaluation of existing standards and procedures or the creation of new ones. Understand the roles and responsibilities of the parties involved, and the interaction and interdependencies between different functions and departments.

·      Participate in consumer research regarding product trials to understand how to get consumer perceptions and follow up on the results.

·      Gain insight and understanding of the global beer innovation trend and generates ideas/proposal for new NPD.

·      Collaborates with Brewing, Quality, Packaging, and Engineering to implement delegated tasks related to NPD, process improvement and product quality improvement.

·      Collaborate with the Quality Department for sensory development related to the NPD and assess consistency and stability of existing products from raw materials to finished goods.

·      Share good and “bad practices” during team talks. Exchange experiences and collect feedback from colleagues to identify opportunities for improvement of the quality process.

EDUCATION REQUIREMENTS

·      Master’s degree in Brewing, Chemistry, Food Science, or related field is preferred.

• A minimum bachelor’s degree in Brewing, Chemistry, Food Science, or a related field, with much experience in New Product Development and Process Improvement Projects is accepted. 

WORK EXPERIENCE

·      At least 7 – 10 years’ experience in the role and working in a brewery focusing on beer quality improvement and innovation from the big scale company.

·      Track record of project management experience in New Product Development.

·      Experience in providing process improvement and managing quality standards.

KEY SKILLS

·      Expert knowledge of the brewing process.

·      Ability to calculate and create new recipes of beer starting from raw material till finished product.

·      Strong problem-solving skills and analytical thinking skills.

·      Ability to work within a team and coordinate efforts between different stakeholders.

·      Proficiency in Microsoft Office, Project Management and Process Control Improvement.
